About Carus Vini & terroir:

Carus Vini farm https://www.carusvini.it/en/ consists in 26 hectares of which 13,5 dedicated to wine production and 4,5 to olive oil. It is situated in the heart of Chianti Classico between San Casciano in val di Pesa and Mercatale, one of the best locations to produce this excellent wine. The vineyards are on calcareous clay hillsides, at elevation of 300m above sea level. The primary varietal are the 8,5 Sangiovese hectares that have been qualified to produce Chianti Classico, the rest is Merlot, Cabernet Sauvignon and Shiraz. These vine types are cultivated either a cordon or “Guyot” with a density of 3.500 – 5.000 plants per hectare according to vine type and the area. The different exposure of our vineyards allows to produce grapes with a high organic complexity, a necessary precondition to obtain excellent wines. Guido Carissimo, the owner, aims at perfect balance between vegetative growth and productivity and, to this purpose, the vineyards are carefully tended until the harvest, which is done by hand into small baskets, and is carried out in different phases to guarantee that the grapes are picked only when they are perfectly ripe. In the cellars, Guido consulting the winemaker Gioia Cresti, do their utmost to maintain the quality of the grapes, combining traditional techniques with some modern technologies. The cellar has a dozen steel vats with controlled temperature, both in the traditional cylinder form and in the conical form. They are all in small dimension to optimize the wine management keeping wine type and source separated. Our wines aged both in our steel vats and in our French oak barrels. Bottles are then stored horizontally in the winery in specially designed supports to optimize the cork conservation.
